
The Lake Superior Art Gallery is proud to have Cindy's Corner Deli staff as our caterers.
Cindy's Corner Deli was born in 2001 and over the past 7 years, has gathered a considerable group of clients. Some of those clients include the Lakehead Public School board, Police Board, Children's Aid Society, B.I.S.NO, Dilico, St. Agnes Church, St. Elizabeth's Church, Y.E.S. Employment and Gliding Centre for the Air Cadets. They have built a great reputation in our community, with good homemade food.
In 2002, they were the Winner's of the Thunder Bay Charity Casino's "Best of the Best" Baby Back Rib Competition. Also, in 2003, they won the "Best of the Best" Appetizer Competition.
Cindy Richmond has 20 years experience. Originally from Windsor, Ontario, she started out at Roseland Golf and Curling Club, working there for three years and later, Menards Seafood Tavern which is famous for it's fish & chips.
She moved on to Thunder Bay in August 1991 and started cooking for the Ortona Legion BR 113, doing banquets for groups numbering up to 600 people. In between doing deliveries to day-cares and picking up supplies, you will find her at the Deli, putting chickens on the rotissere or spicing up the Barons for the many Beef On A Bun orders they receive.
Terry MacDonald is an expert on all our homemade salads with her ever-popular Potatoe Salad, Vegetable Salad, Greek Pasta Salad, Coleslaw, Tuna Macaroni, Bean Salad, Fruit Salad and the list goes on...
She also makes a mean gravy with all the juices from our Roast Beef, Roast Pork and Rotissere Chickens, adds her secret spices and it's just like Grandma used to make.
Sheila Brewer brews up a fantastic pastry. Her homemade apple, blueberry, cherry, raisin and lemon pies are to die for. Sheila also makes the Butter Tarts that melt in your mouth, Real Homemade Dainties, Date Squares, Brownies, Pumpkin Squares, Peanut Butter Cookies, Ginger Snaps and Double Chocolate Cookies. She also makes wonderful appetizers with her flaky pastry which she puts into her Mushroom Tartlets, Ham & Swiss Tartlets, Veggie Squares, Bacon Wraps, Burrito's and our all time favourite, Olive Cheese Puffs and Award Winning Sausage Rolls.
Joanie Richmond is our queen of homemade meatballs and pasta sauce. She loves her fresh garlic and uses it well. She makes luscious lasagna with lots of meat and cheese and well as vegetarian lasagna and garlic toast.
All four women complement Lake Superior Art Gallery with their talents, strengths and secret recipes.
